In 2020, The Cornish Bakery set out to evolve beyond its pasty-shop roots in touristy, coastal locations. A-side delivered a bold redefinition of the brand in 2021, developing a scalable formula for growing the bakery portfolio and shaping internal culture.
Every touchpoint was reimagined and individually designed shopfronts created, radically transforming Cornish Bakery into a contemporary, premium bakery café brand. Now thriving on inland high streets and in designer outlet centres, Cornish Bakery has moved beyond the limitations of the coastal market.
With 66 bakeries, it is now the second largest brand in the quality bakery coffee shop sector (under Gail’s). Annual revenue has increased from £17.5million pre-Covid to £29.4million in 2024 and the team swelled from 421 to 671 staff between 2022 and 2024, a 59% rise.
